Of those three, the Mario games are the ones that people are still ripping things off of today, from Sonic taking the reins on the 2D playing field, to every 3D platformer taking a lot of their cues from SM64, and though SMB for the NES didn't create the first "easter egg" in any kind of software the argument can be made that it started the fad that's continuing today of developers putting in as much extra, "hidden" material as they are.

I do like the fact that Sonic can roll and whatnot, but Mario has made the biggest impact on video games I think, together with Pac-Man but the latter I'm a bit too young for I'd say. Also can't forget all of the Mario merchandise and the Super Mario Bros Super Show :)
