This is tough, I love all those bands.
AC/DC would get kind of boring because their songs are so similar.
Van Halen would probably be very hard.
The Beatles, while amazing together, the guitar work in the majority of their songs just isn't anything special.
Led Zeppelin would be good, but everyone would just play "Stairway" and never try other songs.
So, I guess that only leaves The Who for me.

I would like to see a Southern Rock version myself, maybe even have an acoustic guitar. Some Skynyrd, CCR, Doobies, 38 Special,  I'd buy that in a heartbeat.

I couldnt pick all the above as I'm not much of an AC/DC fan or a Van Halen fan either.  I'd rather see Matthew Sweet get his own before either of those two.  Wouldnt mind Queen or Megadeath added to it as well.  Maybe som Atkins as well.

Of those choices, Led Zeppelin definitely.

I'd really love a version of Guitar Hero dedicated to progressive/power metal bands however, like Dream Theater, Blind Guardian, In Flames, Gamma Ray, Sonata Arctica, Kamelot, Edguy, Symphony X, etc. etc.

I'd have to go with The Who, though Zeppelin and Van Halen aren't far behind. The Beatles are great, but not exactly a guitar-heavy band.
